Has anyone in here sous vide fruits for SMOOTHIES? Curious if the cooking process will push the fruits to ripen more. I want to make a smoothie today!
Fruit can ripen under exposure to etheleyne. Exposure to sunlight too. But I don't think ripening is heat related.
What type of fruit? If it's too sour for you sprinkle it with salt. Really works on pineapple and bananas.

It'd depend on the temperature, but I'd assume cooking is cooking.
