Alternative that is not as extreme, and very effective:

> I use a [BernzoMatic BZ4500HS](https://www.amazon.com/BernzOmatic-361472-BZ4500HS-Shrink-Torch/dp/B00834RCLU). It’s identical to the [Sansaire torch](https://www.amazon.com/Sansaire-KIT001-Searing-Kit/dp/B010H2TOJS/ref=cm_cr_arp_d_product_top?ie=UTF8) (except for the colour and the lack of an over-inflated price). The BZ4500HS has a wider flame than the TS8000, so it works better for searing. For gas, I’m using [MAP/Pro](https://www.amazon.com/WORTHINGTON-CYLINDER-332585-Pre-Filled-Cylinder/dp/B00826MGT2/ref=pd_sim_469_1?_encoding=UTF8&pd_rd_i=B00826MGT2&pd_rd_r=96SY36Z4Q7F6EFH1J39Y&pd_rd_w=mZg93&pd_rd_wg=9IEdq&psc=1&refRID=96SY36Z4Q7F6EFH1J39Y) (propylene), mainly because it burns a bit hotter than propane or butane. It’s also what is recommended by [Modernist Cuisine at Home](https://www.amazon.com/Modernist-Cuisine-Home-Nathan-Myhrvold/dp/0982761015/ref=sr_1_1?s=books&ie=UTF8&qid=1516695631&sr=1-1&keywords=modernist+cuisine+at+home). (Good book, BTW, if you want to try some fancy and technical kind of cooking.)
