# Differences SousVide mode on and off

Hi everyone, newbie here.  
Maybe because the wrong keywords but I couldn’t find information about this. For the same setting of temperature and time, what would be the main differences when Sous Vide mode is on and off (besides one can only do under 100c)? Thanks!
