At this site, [https://oven.anovaculinary.com/recipe/u4G0Y5wlIHADRVZObziu](https://oven.anovaculinary.com/recipe/u4G0Y5wlIHADRVZObziu), it is said to preheat the oven. Once it reaches temp of 212°, put the eggs into the oven.

My question is, when I open the door of the oven, the temperature drops to 185°, that being true, what is the cook time? 15-17 minutes at that point?

Or do I wait until the temperature recovers to 212°, then set the time to 15-17 minutes?
