# How to Cook a Steak

This story started 20 years ago. I was visiting a famous Steak House in Devonport, Tasmania, Australia - “ **Dannebrog Cafe and Bar Grill** ”. The menu included instructions on how Steaks can be cooked. I asked permission, took a copy and reworded it slightly.

I keep copies of the following table in my wallet. It is handed out to friends, strangers and restaurants. It is my way of educating the world. **No offense intended.**

What I like about sous vide is that it is easy to hit any spot in between the six levels shown. I like a chart with temperatures as well. Makes hitting the mark easier when you are using conventional methods and setting the sous vide heater.
