If my pot is not deep enough, can the Anova rest on the bottom of the pot so the minimum fill line is reached? Will this interfere with the water circulation?

You can place it on the bottom, but try and make sure it’s attached to the lid somehow as the circulation may cause it to wobble.

If you can only fill to the minimum line, you run the risk of dipping below that while cooking which could potentially damage the heating element.
