@gopaus The APC is an awesome birthday gift, my cats bought mine for me and I was amazed that they could even afford it! I will have to check my credit card statements.  I’m still waiting on a nice piece of lean Kangaroo steak from my butcher, [this recipe](http://recipes.anovaculinary.com/recipe/sous-vide-kangaroo-steak) looks so tempting. Made 8 hour tritip steak last night which ended up at a tenderness between a good ribeye and a filet. Have also made the perfect one hour egg for eggs Benedict. I can see using this device regularly and am a big believer in the technology. Thanks Anova. It works so well that I am going to buy another as a gift for a friend. ---
