I had set the oven temp to 155, with the probe set to 135. When I returned roughly two hours later, the probe was at 146.

Was the probe’s display at 146F or did your set temperature change?

Usually matching oven temperature with probe temperature will solve your over cooking problem.

Yes, the probe temp was at 146 at about 2 hours. Set temps were 155 oven and 135 probe. I may try matching oven to target and see how long that takes to equilibrate.

Yep, that is just one way to cook a prime rib to perfection with the APO! You can use it anyway you’d like.
