Here's how to use the Baking Steel for Bagels (Anova recipe)

  1. Remove an oven rack from the Anova Oven and place the heavy baking steel on top of it. For ease of handling, move the rack and baking steel together throughout the baking process.
  2. To prevent the raw dough from sticking to the baking steel while steaming the bagels, cover the baking steel with a sheet of silicon (tailored Super Parchment Paper or a Silpat) or just use a tailored sheet of parchment paper. Once steamed, the bagels can then be baked on the bare baking steel surface without sticking.
