When I set the temp to 130f, sous vide, 100% steam, rear element, the internal temp goes to 165f and pretty much stays there. The oven reads that it’s at 130f, my thermometer reads higher. Is this normal? At 100% humidity, the wet bulb and dry bulb should be the same. I would think that if the oven is set to a temp in sous vide mode the internal temp of the oven should be maintained at the set point. Do I have a bad oven?
