I’m trying to get wilted spinach with whole leaves, not the stringy wet glop that often happens in a pan.
It seems to me that it might work and would keep the leaves bright, like kale.
I’ve seen it done with Kale. but you’ll need a vacuum sealer to get all the air out. But personally I’d stick with the pan. Spinach is like scrambled eggs - if you wait until it looks done it’s far too late, it needs way less time than you think.
