What does it actually mean with regards to the wet bulb temperature when the oven is set to 100% at 200C? Surely the relative humidity can’t actually get to 100%… right?
What are you looking at or reading etc to have this question? The wet bulb sensor is likely only used below boiling point.
Above this point the steam is called super heated. I think the reason they call the control 100% steam instead of humidity is because this changes over boiling point. You can still be injecting 100% steam over boiling point, but depending on temp this shifts to differing levels of humidity. The higher the temp the lower the humidity with super heated steam.
