Amazing dry aged new York strip aged 90

Wow!  So you cooked it in your sous vide, but then finished it on a charcoal BBQ?  That’s one thing about charcoal - the incredible flavours that you get in the meat.  How would you say the flavouring compares to a steak that had only been done on charcoal?
