Antelope from Wyoming

Attempted to cook some antelope. Salt, pepper and garlic powder. Aged the small roast in the refrigerator for 7 days. Made sure all of the silver skin and fat was removed (there was very little). I cut the roast into small four 3-4 ounce pieces. This one was cooked at 133°F for 3 hours, then quick seared in butter. Pretty good. It can be doneUploading...
