First attemps and a timer question

First Sourdough Bread with APO gone fine, now I’m trying ribs and I’ve a question.

They suggest 8 hours at 73°c, but my timer stops everytime temperature goes 72.9, than starts when 73 again. After the first hour is 5 minutes behind my clock. I’ll count my time, but there is any way to let Oven ignore this? :slight_smile:
