Inconsistent bacon

So I’d made bacon three times, following the “Bacon 101” guidelines, and it came out perfect, every time.

But yesterday, I did it again, and this time it was very slightly overdone, completely crispy, with none of the internal juiciness I’d had when I’d followed the steaming-to-air-frying guides the way I had before.

Any suggestions as to what may have caused the difference?

I find the quality-like condition of bacon quite inconsistent; thickness of the slice, amount of fat, amount of connection is the slice.

I do not have an APO.

I diligently practice my weekend breakfast of soufflé-style pancakes with bacon. I have given up trying to make consistent bacon. Thank goodness Milady Wife takes credit for her bacon in a conventional oven.
