Can’t wait to receive my PC to start cooking sous vide! So, what should I try first - steak or chicken breast (notoriously easy to over cook)?
@pkway congrats! People on this forum might be tired of hearing me go on about chicken breast but it really is so easy to get truly spectacular results. I prefer cooking with a chunk of butter and some garlic, and in the bath for an hour for 60c to 62c. So tender and moist. Prime cuts of steak are easy to get right, 56 to 58c for an hour to 90 minutes with butter and seasoning, a quick pat dry and then sear in a red hot pan for 30 seconds a side. Be warned, if trying a 48 hour chuck steak, to make sure you go to a butcher and get good quality meat. Please let us know how you get on, and if you have any questions please ask!
