Can you cook a whole stuffed turkey?

I wouldn’t. The cavity in a whole bird creates an air pocket which is problematic. Stuffing presents its own set of issues. You might find useful information in Baldwin’s Practical guide to sous vide cooking..

I also wouldn’t SV a turkey that way, but if you’re still interested in cooking a turkey SV, I did last Thanksgiving, and it turned out great. I have a post here titled Best. Turkey. EVER. where I listed how I did it.

No luck with a whole turkey.
As another option, you could try this: I have deboned the thigh and leg, stuffed, rolled, and tied. Then sous vide and brown to finish. It works well.
