I was doing some ribeyes at 140, 100% steam. I happen to walk by and see the temp was 163! I have a screen shot of the app and the display. What is going on??? I can’t trust this anymore.
Your screen shot does not show the probe temperature, Did you plug the probe in?
Shouldn’t matter: The cooking temp is set to 140, so the actual temp should not be 163.

No. No need for a probe. It’s pretty hard to overcook with sous vide.
The oven is set at 165F, maybe you just typed 140 and didn’t hit return??
I don’t see a cursor in the temp box…I never set the oven for 165. It was a ribeye. That would be nuts.
