Beef tri-tip for a friend

A friend scored a tri-tip for $2.99/lb, an amazing price. I took the opportunity to cook it with the APC and maybe sell one for you.

I cooked it at 131F/55C for 4 hour. After that I let it rest on a rack while the oven heated to 425F/218C. I sprayed it with oil and sprinkled a little salt. After 15 minutes in the oven I used my Searzall to add color to the fat layer on top.

Normally I would season more but my friend prefers less. It turned out well, medium rare edge-to-edge. In addition I see I should have trimmed it a bit before cooking.

Is there some kind of program where I can get diamond points from selling a bunch of APC units?

That’s a really great deal! Glad your friend loved it. You get lots of magical diamond points! But in all seriousness, I know some sort of referral program has been brought up before by others too. I can’t make any promises, but it’s something I’ll look into.
