Here in Oregon we have a daily limit of 25 Kokanee Salmon each, my wife and I that’s 50. We want to know if there is a way to use the APO or Anova circulators to can the Salmon in a canning jar sealed the under vacuum. Or should we go back to the pressure cooker method?
I would not use sous vide for canning fish.
You need higher heat which comes when using pressure cooker.
