I am guessing that its piston is plastic.
Today I bagged, vacuumed and sealed 18 bags. Too many times it did not draw a vacuum until I waited and / or rearranged the bag in the foam seal ring.
So, overheating or something else?
This won’t help you much but i use a Foodsaver and it does the same thing. Mine needs to cool down when that happens before i can use it again.
If you’re under warranty contact Anova. I had inconsistent vacuum issues with my pro and they are replacing it.

Whatever faults folks may find with ANOVA, their warranty / support is great.
