Stuffed Chicken Question

I have a recipe with mozzarella and pepperoni stuffed chicken done in a skillet. Could this be done sous vide?


There are recipes out there for stuffed chicken - mostly for chicken breasts. Are you looking to stuff the entire chicken?

I haven’t tried this for myself, but I wonder whether handling cheese sous vide would be a messy process. The thing you might want to check is whether the temperature required for the cheese to melt will also cause the chicken to be overcooked.
