Recipe Name: Zesty Cheesecake w/ Blood Orange Jam

Ingredients

For the Cheesecake:

  1. 2 8oz blocks cream cheese, softened
  2. 3/4 cup granulated sugar
  3. 1/3 cup whole milk
  4. 2 large eggs
  5. 1/2 cup creme fraiche
  6. 1/2 tbsp Madagascar vanilla extract
  7. Zest of 1 lemon
  8. 1/8 cup all purpose flour

For the Jam:

  1. 3 medium/large blood oranges, supremed
  2. 1/2 cup water
  3. 1/2 cup granulated sugar
  4. cornstarch slurry (2 tbsp cornstarch/2 tbsp water)

Steps

For the Jam:

  1. Combine blood oranges, water, and sugar in a medium saucepan over medium-high heat
  2. Stir until sugar is completely dissolved
  3. Lightly mash blood oranges until distributed
  4. Bring mixture to boil
  5. Pour in the cornstarch slurry and reduce heat to simmer
  6. Stir until sauce begins to thicken and then take off heat to cool

For the Cheesecakes:

  1. Set circulator temperature to 185 F/ 85 C
  2. In a large mixing bowl combine cream cheese, milk, sugar, and creme fraiche.
  3. Mix with a hand mixer until smooth.
  4. Add eggs one at a time mixing each one in thoroughly
  5. Mix in the vanilla extract.
  6. Zest lemon over the bowl and fold into batter
  7. Add the flour and mix again until smooth
  8. Line the bottom of 4oz mason jars with a touch of softened butter and crushed graham crackers
  9. Fill jars halfway with cheesecake batter
  10. Spoon in blood orange jam
  11. Fill remainder of the jar with batter
  12. Finger tighten the lids and place in the water bath

This recipe yields 12-15 individual cheesecakes if using 4oz jars. Can easily be upscaled for larger jars or even a whole cheesecake.

Yes, the recipe time is the cook time. It’s about 30 minutes of prep time so 2 hours overall.

It’s good that I found this recipe, just for my wife, I want to surprise her, since we recently purchased a mixer 10 Best Stand Mixer for Bread Dough, Cookies and Beyond, and it will help for me to make a pastry chef’s dream come true :slight_smile: My mother also told me how she manually made a similar recipe, but instead of sugar we took a sweetener and together with cream and milk powdered milk, since it is more convenient to cook with it. This recipe is the best I’ve seen because the ingredients suit my taste preferences. This is the best I’ve ever seen and immediately wanted to eat
