Just wondering if the 800-Watt cooker I have heat up the 16L container without shorting out or do I need a more powerful unit?

800 Watts will do just fine, merely take proportionally longer than a more powerful unit.
Although it seems obvious it is much easier to start with hot water near your cooking temperature. I have used hot tap water which is near temperature for beef. For other items that nee hotter water I will use stove to get it close.
Thanks for the reply. I was just concerned if it could keep up a constant temp in the 16L sized container.
An experiment should ease your mind. Heat your 16L to 180ºF and monitor the temperature. 180ºF to maximize the heat transfer out of the container.
Pre warm, (hot tap)
Cover vessel (less evap)
Don’t take the piss with extreme temps (ie a cold floor of a cold garage) all should be fine “maintaining” temp.
But, my pref would personally be for a faster reacting (1000w or more) unit, just because that’s what I have now. (all else would be a retro step)
If that’s what you have, that’s what you work and plan around.
