First Time Trying Sous Vide — Any Beginner Tips?

Hi everyone, I recently started getting interested in sous vide cooking and I’m excited to try it for the first time. I love the idea of consistent results and better flavor, especially for meats and meal prep.For those who’ve been using sous vide for a while, what’s the first recipe you recommend for beginners? Also, any mistakes I should avoid on my first cook?Looking forward to learning from this awesome community!

Before you cook anything I would check the guidelines here to make sure your food is properly cooked. Baldwin sells a book but all of the essential information is on his site.

For your first cooks I would do something fairly easy that does not take too long.

My favorites are salmon and chicken. Steak is good as well if you want to do a hard quick sear.

Do not be stingy with your bag size. To start with, I might make vacuum bags twice as long as one might estimate, and then as experience is gained shorten them. Longer bags allow one to reopen to add or adjust aromatics and seasonings, and are easier to avoid wetting the sealing surface.

Learn the effects of the oils that you use, on flavor and smoke point while searing. I now use avocado oil and tallow. Learning to use avocado oil led me to the seed oils controversy.
