I’d like to make this recipe but use less than amount of potatoes called for. This recipe calls for 1 pound of potatoes to be cooked at 190F / 87.3C for 1 hour.
Question: if I decide to use a lesser amount of potatoes, will I have to adjust the time / temperature?
Keep them in a single layer in the vacuum bag and no adjustments are necessary. Also, try and use potatoes that are about the same size as really big ones will take longer than small ones. If you look at the picture they are all roughly the same size.
