Tender octopus

Octopus has a wide range of both temperatures and times. I chose 160F/71C 48h because I already had a long cook going at that temperature and I wanted the 180F/82C 24h result. For tissue breakdown I have found that I can trade time for temperature.

It worked! They were very tender but still held together, just what I was hoping for.


Nice, how did you finish it?

No finish, as such, but served in a salad with and Italian oil and vinegar dressing.

Was the skin easy to remove or you ate it skin on?

I didn’t think of that, so skin on.
