Can unglazed clay pots be used in the Anova Precision Oven?
As long as you can close the oven door, yes.

20. Extreme caution should be exercised when using containers constructed of anything other than metal or glass.
Hypothetical problems might include; steam induced stress in the ceramic as absorbed water is heated to steam, or thermal stress due to uneven heating. Unsanitary conditions due to the inability to clean within the ceramic structure.
I would wait on an authoritative response from ANOVA staff.
Wondering if steam function would be used or just use Anova as a regular oven.
I think the answer depends on the type of clay the pot was made from and how vitrified the clay is after firing.
